Merry Christmas! I hope you are having a great month and that you are nearly ready for the upcoming celebrations. We have plans for baking and enjoying each others company as we celebrate Advent and Christmas this week. This month’s newsletter is short and sweet due.
Have a blessed Holiday Season as we celebrate the wonderful gift God bestowed on us when we sent us his Son as a mere babe. What joy! What hope! What love!
Investing in Your Health: Gift Ideas from the Kitchen
This year give yummy treats from your kitchen. I love preparing sweet breads for Christmas to share with those we love. It is also fun to give mixes to people to make at their own leisure. Recipes abound online for cookie mixes, brownie mixes, bread mixes and more that can be put into mason jars. Just top the jars with some pretty fabric and a bow to make a lovely gift. Don’t forget to attach the recipe as well.
See below for a whole foods adaptation of quick sweet breads.
Recipes:
Sweet Quick-Bread Mix

12 cups pastry wheat flour
2 tablespoons baking powder
2 tablespoons baking soda
1 tablespoon sea salt
In a large bowl, stir flour, baking powder, baking soda, and salt with a large wire whisk until blended. Spoon mix into a 24-cup container with a tight-fitting lid. Seal container. Label with date and contents. Store in a cool, dry place. Use within 6 months.
NOTES: SWEET QUICK-BREAD MIX makes: Banana-Nut Bread, Carrot-Orange Loaf, Cranberry Bread, Date-Nut Bread, Pumpkin Bread, Spicy Applesauce Bread, Zucchini Bread, Poppy Seed-Lemon Bread.
Banana-Nut Bread (Sweet Quick-Bread Mix)
2 1/2 cups Sweet Quick-Bread Mix -- (see recipe)
1/3 cup melted butter or coconut oil
2 eggs -- beaten
1 cup raw honey
1 tablespoon lemon juice
2 medium bananas – mashed (about 1 cup)
1/2 cup chopped nuts
Preheat oven to 325 F. Grease one 9" x 5" loaf pan or two 7" x 3" loaf pans; set aside. In a medium bowl, combine all ingredients, stirring to blend. Turn into prepared pan or pans. Bake 50 to 60 minutes in preheated oven until a wooden pick inserted in center comes out clean. Cool on a rack 5 minutes. Turn out of pan. Cool right-side up on rack. Makes 1 or 2 loaves.
TROPICAL BREAD: Add 1/2 cup coconut flakes and 1/4 cup chopped dried pineapple.
Carrot-Orange Loaf (Sweet Quick-Bread Mix)
2 1/2 cups Sweet Quick-Bread Mix -- (see recipe)
1/3 cup melted butter or coconut oil
1 cup raw honey
2 eggs – beaten
1 cup grated carrots
˝ cup orange juice
1 teaspoon grated orange peel
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 cup chopped nuts
1/2 cup raisins
Preheat oven to 325 F. Grease one 9" x 5" loaf pan or two 7" x 3" loaf pans; set aside. In a medium bowl, combine all ingredients, stirring to blend. Turn into prepared pan or pans. Bake 60 to 70 minutes in preheated oven until a wooden pick inserted in center comes out clean. Cool on a rack 5 minutes. Turn out of pan. Cool right-side up on rack. Makes 1 or 2 loaves.
Cranberry Bread (Sweet Quick-Bread Mix)
3/4 cup orange juice
1 cup fresh or frozen cranberries
2 eggs -- beaten
2 1/2 cups Sweet Quick-Bread Mix -- (see recipe)
1/3 cup melted butter or coconut oil
1 cup honey
1 teaspoon grated orange peel
Preheat oven to 325 F. Grease one 9" x 5" loaf pan or two 7" x 3" loaf pans; set aside. Combine orange juice and cranberries in blender. Process on chop 4 or 5 seconds. In a bowl, combine eggs, Sweet Quick-Bread Mix, butter, honey, orange peel and orange juice mixture, stirring to blend. Pour into prepared pan or pans. Bake 60 to 70 minutes in preheated oven until a wooden pick inserted in center comes out clean. Cool on rack 5 minutes. Turn out of pan or pans. Cool. Makes 1 or 2 loaves.
